It&#8217;s not just centuries though <em>tens of thousands of centuries old<\/em>since people have been eating sharp things for more than two million years.<\/p>\n<p>So when someone says they want to reinvent something so old, it&#8217;s natural to be skeptical. After all, what exactly can you do to make a knife better at what it does?<\/p>\n<p>If you ask Scott Heimendinger, he can tell you that adding ultrasonic technology to a knife can improve this ancient tool. Heimendinger, who founded consumer sous vide startup Sansaire, has been working on that for more than half a decade, and today he announced that the result of all that work is now for sale and will ship early next year.<\/p>\n<figure class=\"wp-block-image aligncenter size-large\"><\/figure>\n<p>So what exactly is an ultrasonic knife? If you are familiar with ultrasonic toothbrushes, it is the same as the ultrasonic energy creates thousands of vibrations per second. In fact, according to the announcement, the knife (called C-200) will vibrate 40 thousand times per second. <\/p>\n<p>Given the time and energy invested, I asked Heimendinger if he was nervous about launching a new product despite being a veteran startup.<\/p>\n<p>&#8220;I&#8217;m really scared,&#8221; she said. &#8220;This is something I&#8217;ve worked on for almost six years and it&#8217;s the first time it&#8217;s going to see the light of day. And I&#8217;m absolutely terrified. I&#8217;ve got a lot of heart and soul poured into this thing and real money and blood.&#8221;<\/p>\n<p>As more than a decade has passed since he launched his first product with Sansaire, I asked him again how the landscape of smart kitchen products has changed since then.<\/p>\n<p>&#8220;In 2012 and 2013, the Modernist culinary movement was at its peak,&#8221; Heimendinger says. &#8220;Now, I think the most common movement in cooking, especially home cooking, is not more technology but less. It&#8217;s kind of going back to analog in a lot of ways.&#8221;<\/p>\n<p>If so, why add ultrasonic technology to the knife? According to Heimendinger, one of the truisms in the world of kitchen appliances is that they should make a cook&#8217;s life easier, not harder. Smart kitchen tech, done poorly, adds extra steps. With his knife, those thousands of invisible vibrations per second help make cutting up to 50% easier.<\/p>\n<p>&#8220;It was very important to me to design a product where all you have to do is touch a button,&#8221; said Heimendinger. &#8220;That&#8217;s it. No phone pairing. No Wi-Fi setup. Nothing. And you can use it when it&#8217;s off, as it&#8217;s also a really nice analog knife.&#8221;<\/p>\n<p>However, even focusing on simple use, Heimendinger realizes that the knife community can be skeptical, and not everyone will be ready to accept something like an ultrasonic knife.<\/p>\n<p>He said: &#8220;The knife community can be assertive in certain ways. &#8220;I know there will be people who think (adding ultrasonic technology) is an affront to the sanctity of the blade. But I hope they will be able to see that I take this seriously. And if we want to have a conversation about what makes cutting easier for home cooks, then there&#8217;s data to support this doing just that.&#8221;<\/p>\n<p>According to the announcement, the blade is made of Japanese AUS-10 san mai stainless steel which is durable and corrosion resistant. The button and grip are suitable for both right- and left-handed users, and the blade can be re-sharpened like a traditional knife.<\/p>\n<p>The product will retail for $399.
